What you will need for this easy dairy-free ice cream:
- 2 cans coconut milk (where to buy BPA-free coconut milk)
- 3 egg yolks (where to buy organic, soy-free eggs)
- 3/4 cup maple syrup (where to buy maple syrup)
- 1/2 cup fresh lemon juice
- 1 1/2 Tbsp grated lemon zest (you can use this zester)
- 1 tsp. vanilla (where to buy vanilla)
- Pinch of salt (where to buy sea salt)
Directions:
- In a pan mix together the zest, juice, maple syrup and eggs.
- Add 1/2 can coconut milk and vanilla.
- Cook on medium heat stirring regularly until it comes to a simmer.
- Turn off and let cool.
- Once cool, strain the mixture, cover and place in the fridge until cold.
- Once cold, add in the remainder of the coconut milk and mix well.
- Place in your ice cream maker and let mix for 30-45 minutes.
- Enjoy!

Hi there!!!! I’m loving your book The Sibo Solution. I was just diagned about 2 weeks ago and I’m obsessed about getting this diet right. I want so badly to fix this.
I notice most low fodmap lists say to stay away from honey and a few other experts don’t believe clover honey to be low fodmap either. I’m so frustrated!! I’ve been making your recipes with honey and wonder if I should leave that out for the time being.
Also, your list says not to use Maple syrup but other low fodmap lists say it’s ok.
I can’t remember if you broke this down in your book.
Can you explain why you say no to maple syrup and why you believe clover honey is ok?

Just made this today and my entire family LOVED it! Even my dairy eating son and husband thought it was outstanding and didn’t believe it was dairy free! My son, who is tired of all things having a slight taste of coconut, said “are you sure there’s no cream in that?” I’m off to try to make a chocolate chip peppermint version! Thanks Sylvie!
